Spiced Lamb Pie With Feta Filo Snail Recipe

  • 6 sheets fresh filo pastry
  • 100g feta quartered
  • 45g pkt pistachio dukkah
  • 1 1 2 tablespoons honey

  • heat oil in a 20cm base measurement frying pan over medium heat add onion and carrot stirring for 4 minutes or until softened add garlic ginger harissa and spices cook stirring for 2 3 minutes or until aromatic increase heat to high add lamb cook breaking up lumps with a wooden spoon for 6 minutes or until browned add tomatoes simmer reduce heat to low simmer covered for 15 minutes remove from heat stir in coriander and juice season set aside to cool slightly
  • meanwhile to make snail preheat oven to 200u00b0c 180u00b0c fan forced spray 1 filo sheet with olive oil top with another sheet and oil repeat halve stack lengthways into 2 rectangles repeat with remaining filo
  • crumble a quarter of feta down 1 long side of a rectangle top with 3 tsp dukkah 1 1 2 tsp honey roll to enclose coil place on lamb mixture repeat with remaining rectangles feta honey and most of the dukkah
  • spray filo snail with oil sprinkle with remaining dukkah bake for 30 minutes or until golden and crisp
