  • 60g pkt coles australian baby rocket
  • 1 small red onion cut into thin wedges
  • 100g fresh ricotta
  • 1 tablespoon lemon juice
  • 1 4 cup 70g greek style yoghurt
  • 1 tablespoon finely shredded mint
  • 1 garlic clove crushed
  • 2 tablespoons flaked almonds toasted

  • preheat oven to 180c combine the carrots beetroot cumin and half the oil in a medium baking dish roast for 30 mins or until tender
