- 40g 1 4 cup pepper steak seasoning
- 2 tablespoons sun dried tomato pesto
- 8 slices crusty white bread toasted
- 100g baby spinach leaves washed dried

- heat 1 1 2 tablespoons of oil in a large non stick frying pan over medium heat add onions and sugar cook stirring often for 15 minutes or until golden transfer to a heatproof bowl and cover to keep warm
- meanwhile sprinkle both sides of the beef schnitzels with steak seasoning use your fingertips to press seasoning onto schnitzels cover with plastic wrap and place in the fridge for 5 minutes
- heat 2 teaspoons of remaining oil in the frying pan over medium high heat add 2 beef schnitzels and cook for 1 minute each side or until cooked to your liking transfer to a plate and cover loosely with foil to keep warm repeat with remaining oil and schnitzels
- spread tomato pesto over each piece of toast top 4 of the slices with spinach schnitzels and onion mixture cover with the remaining slices of toast and serve immediately
